Walnut and tofu tacos – vegan tacos for a Friday night

Greetings! What are your plans for dinner this evening (if you have not already eaten!)?

I have just finished dinner. It was delicious, so I thought I would share the RECIPE with you!

The vibe of this dish is a creative twist on the walnut tacos recipe on this blog. It is a little different though, because we will use crumbled tofu with the walnuts to make a more ‘mince meat’ textured protein part of the meal. We will also use a creative sauce to mix through the tofu and walnut crumbs to add flavour and get the ‘meat’ to clump together like mince meat would.

The recipes I will share today, come from Loving it Vegan. The full recipe is here:  Vegan tacos however, the most important part of this recipe I think is the vegan taco meat.  Alison is right! It is the BEST EVER!! Once I found this recipe, I couldn’t go back.

It would also have a lot less energy DENSITY than using walnuts alone for the taco meat, as walnuts are quite energy-dense.

I like to riff on the pico de gallo salsa a bit. I added capsicum, and crushed corn chips. I omitted the garlic (because I had used garlic in the taco meat instead of garlic/onion powder).

I use the tahini sauce as is (pretty much), because it adds a lovely creaminess and offsets some of the sour flavours of the other elements in this dish.
