Healthy food for lunch – sunshine slaw

I am so glad I made the effort today. There is nothing more satisfying than healthy food for lunch. I made a half measure of Cookie and Kate’s Sunshine slaw with quinoa because I had some sunshine dressing left over from another yummy salad of hers. But this one is definitely my favourite. The crunch of the toasted pepitas and the sweetness of the onion combined with the satisfying quinoa grains really makes for an absolutely delicious lunch.

Of course, the success of this salad can depend somewhat on the veggies you use in the salad. I recently bought a mandolin and it shreds cabbage so beautifully. In my salad bowl was shredded wombok cabbage, grated carrot, and shredded (and then chopped) Brussels sprouts. It was a taste sensation!

It is okay for me. I am working from home and had planned the ingredients in advance. Sometimes, it can be hard to know what to make in terms of healthy food for lunch. And while toasted sandwiches are nice during winter, I feel they should be an occasional thing, because the sugar from the carbohydrates in the bread can result in a higher-than-desired blood sugar peak.

I make a lot of soups in winter. They are so great because it might take up to an hour to make one batch, but then you can eat them for days for lunch, and it takes the mental workout of healthy food for lunch.

In summer I tend to make a batch of salad and have that for lunch, but I was just feeling like salad on these winter days so that was why the sunshine dressing and salads came out.

I am so glad that they did. They have been excellent winter lunch options.

Last night I read that 91% of adults in Australia do not eat the recommended amount of vegetables each day. This has made me ponder health promotion generally. Since, I think I am in a specific demographic of health-conscious people who get irked by unhealthy options in cafes, restaurants and food trucks.

And it is only when we start to eat more healthy food that our bodies start rejecting unhealthy options. The more you eat vegetables the more you like vegetables basically!

And so, this sunshine salad, which has certainly brought sunshine to my mood, is great, because it provides at least two good servings of vegetables as well as some protein from the quinoa, dressing and seeds.

I know it can be harder when you are working from an office. But you could always pack your lunch ahead.

It can depend on where you live and work too. I feel so grateful to live and work in a suburb that has a lot of healthy options, but this is not the reality for some people. So, I guess you need to work a little harder, unfortunately.
