31 May Cream of broccoli soup – vegan broccoli soup
I made the most delicious vegan broccoli soup today. It was a Cream of Broccoli soup from a Cookie and Kate recipe. I love it so much because it is super easy to throw together. Easy enough to cook in a few breaks from working at home, and it is intensely delicious. Pure pleasure on every level.
Soup in winter, salad in summer
During winter, my meal planning involves a few dinner main courses over a week and a regular pot of soup. Soup is great because a big pot of it can last up to six days (if you are lucky). That means that during most of the working week, all that needs to be done is to dish out a serving and heat it up on the stove (or the microwave if that is your thing).
Soup is so comforting when it is cold outside. And it can be so incredibly tasty.
Light lunch
I don’t feel like this Cream of Broccoli soup needs to be eaten with toast, so it can be a low-carb, low-calorie meal that makes for a yummy, light lunch. But if you want to bulk it out, you can eat it with a couple of slices of toast, or better, a salad to go with it. The ultimate in decadence. Soup AND salad. Oooh la la đŸ™‚
Low-effort working lunch – Cream of Broccoli soup
This cream of broccoli soup was all that and more. All the effort that was required was to roughly chop two onions, smash and peel six garlic cloves and roughly chop broccoli stems and then florets. Super easy!
And for so little effort, this soup was BIG on flavour. I wasn’t sure about using so much butter. And I used Nuttelex vegan butter, which is hopefully better for my health, to make a truly vegan broccoli soup. But the way the onions and garlic sauteed in the (vegan) butter was the basis for a huge flavour profile.
Cooking the broccoli florets in the broth (formed by adding the water), was a breeze, and then after blending, and adding the lemon juice, the soup was one of the tastiest I have ever tried.
The result is worth writing home about!
Cream of Broccoli soup doesn’t sound that exciting, but the lemon, salt, onion, garlic and broccoli combination is a TASTE SENSATION!
