04 Feb Tuna salad for anytime of the day or night!
A very hungry mouse!!
I am not quite sure **what I am doing with breakfast, to be honest!
Dr Morse won’t be opening for an hour (and a few). And I won’t be doing that breakfast sandwich again! (That was INSANE!!)
I am hungry though.
My inner voice suggested rice and tuna (much like my dinner last night). Myabe that would be the go!
Comforting tuna and rice salad bowl
A yummy, quick, protein-rich, bowl of comfort food for any time of the day
Ingredients
- 1/2 cup brown rice
- 185g can tuna
- 1 tbsp Greek yoghurt
- 1 tbsp horseradish
- 1 tbsp apple cider vinegar
- 2 stems scallions thinly sliced
- 2 sticks celery thinly sliced
- 1 small handful sundried tomatoes sliced
- 1 tsp honey or maple syrum (optional)

Notes
This recipe is pretty easy to put together.
You just cook the rice as you normally would, then take about half (or a 1/3 for a female) of the rice, add the same proportion of the tin of tuna, the sliced celery and sliced scallions, a scant tablespoon of horseradish ( a bit less if you don't like too much spice), a tablespoon of yoghurt, a tablespoon of apple cider vinegar, and if you feel like it, add a tsp of honey or maple syrup.Â
Toss and mix to combine, and you will have a nice tuna mornay salad!
The featured image, includes a tomato and capsicum salsa (diced tomato, capsicum, coriander and lime juice – onion if you are into those sorts of things)
Served on the side, it helps to break up the spiciness of the horseradish.
