But now that it is done, I feel like a cigarette!! (Not neurochemically, but in the SPIRIT of a cigarette).
Green eggs, goats cheese and baked beans on toast
Ingredients
- 1 slice wholegrain bread
- 1 egg medium to large
- 3 tsp goats cheese
- 3 tsp pesto store bought or home made
- 3 tbsp baked beans
Instructions
- Put a small saucepan of water on the stove top and add the egg. Bring to the boil over high heat. When the water starts to boil, set the timer for 4 minutes. Meanwhile press the toast down in the toaster.
- Cook the baked beans on low for the last two minutes.
- Spread the toast with goats cheese and pesto. Then peel the egg, slice it and dollop baked beans on top.
- Bon appetit!
