ANT THIS TIME – make it vegetarian!!

i got everything ready and chatted to some clients during the process. . . and then the hob wouldn’t ignite. . . OHJ NOOO!!
I was so worried for a sec.

Until the back burner worked. Shoulda got induction, perhaps, , , I coulda made it work?>

But now that it is done, I feel like a cigarette!! (Not neurochemically, but in the SPIRIT of a cigarette).

A vegetarian version of my pesto eggs breakfast

Ingredients

  • 1 slice wholegrain bread
  • 1 egg medium to large
  • 3 tsp goats cheese
  • 3 tsp pesto store bought or home made
  • 3 tbsp baked beans

Instructions

  • Put a small saucepan of water on the stove top and add the egg. Bring to the boil over high heat. When the water starts to boil, set the timer for 4 minutes. Meanwhile press the toast down in the toaster.
  • Cook the baked beans on low for the last two minutes.
  • Spread the toast with goats cheese and pesto. Then peel the egg, slice it and dollop baked beans on top.
  • Bon appetit!
