18 Aug Sweet potato bites with beetroot, wombok and carrot slaw
If there is one thing that I can rely on to reliably cheer me up when it feels like the world is bleak and cold outside, it is planning and cooking a delicious meal.
I have been planning a lunch bowl based on the ingredients that I have on hand. I am keen to use what I can use of what I already have than rushing out to fill up my fridge again.
My last shop lasted so long!
Today’s menu
- Cauliflower and sweet potato rice ball, with a tahini, chilli and coriander dressing
- Wombok, beetroot and carrot slaw with an Asian dressing
- Green leaf salad with maple walnuts and lime juice vinaigrette
Results:
It had a lot of good things going for it this meal. The first thing is that it did fill me up, even though it was a little lacking in protein. The wombok and beetroot slaw with the Asian dressing was the star of the meal, and cauliflower and sweet potato bites were a taste sensation, especially with the tahini dressing.
It makes me realise that I need a whole heap more learning though to get this show on the road.
