This recipe is a little ‘rich’. I bought half the feta, and it was more than enough.
It is tasty, but I think it should be served with a green salad dressed with some kind of bright vinaigrette, and perhaps some steamed asparagus or broccolini.

Also, I wouldn’t expect four servings from this recipe. It is enough for two servings.
When someone asked the other night, I was researching low-carb Mediterranean recipes. This one was one of the tempting morsels that I found.
