Spicy salsa with egg on toast

Ingredients
- For the salsa
- – 1/4 red onion – diced
- – 1/2 red capsicum – diced
- – handful of parsley finely chopped
- For the dressing
- – 1 tbsp sesame oil
- – juice of half a lemon
- – 2 tsp of tamari
- – clove of garlic grated
- – 1/4 tsp of chilli flakes
- To serve
- – slice of toast
- – boiled egg
Instructions
- Add dressing ingredients to a smalll bowl and stir.
- Add diced onion, capsicum and parsley to a medium bowl with dressing and toss.
- Add egg to pan of water and once boiling cook for 4 minutes
- Meanwhile toast bread
- Once bread is toasted, spoon salsa on top of the toast, and then slices of boiled egg.
