Spicy coconut fish curry

There is nothing like something warm and nourishing for dinner to re-energise the spirits and comfort my soul. I ate a very yummy fish curry with brown rice tonight. It was spicy from lemongrass, turmeric and fresh chilli and creamy from coconut milk, Ling fillets from Eden, NSW and some tofu for good measure.

Fish curry is the business in my opinion. This is the second fish curry dish that I have perfected. I have one that relies on cajun spice for spiciness and flavour, as well as fresh tomatoes, celery and carrot for texture. It is yummy too!
