Blah – nuts and seeds cookies

The idea that my friend gave me was vegan spiced Christmas cookies, from this very blog here: Vegan ginger cookies: A festive recipe for the holidays!

My first thought is that my pantry is not very well stocked if it doesn’t have at least some flour in it.

i did find buckwheat flour though and after considering a trek out to FoE to get ingredients (in this heat?!), I decided to continue my nuts and seeds experiment by making some cookies using the nut bread template.

i also used some of the ideas from the above post and felt like I could experiment with using oils, flour, eggs etc as binding ingredients.

nuts and seeds spiced ginger cookies (vego/vegan opt)

the first batch was about 2 cups of ground mixed nuts and seeds, 1/2 a cup of buckwheat flour and coconut oil mixed with oat milk to bind the nut and seed mixture.

the original recipe said to let the mixture stand for an hour and so I did. And yet, it was not a very successful experiment. The flour dried out the moisture in the nuts and oils and the baked cookies were crumbly.

not very nice. Not good for anything much but a crumble on a morning chia bowl with yoghurt and banana.

the second experiment was much better. (Vego)

the combo was the nuts and seeds, a small amount of whisked egg and some of the coconut oil mixture as well.

after baking these cookies were a delectable texture reminiscent of ginger snaps. The spices got a bit over powered by the nuts and seeds, but overall, this seems to be a keeper even though I will need to experiment with MORE spice.

 

The third experiment was middling

this batch had nuts and seeds and no flour but no egg and just the coconut oil mixture as a binder.

it was way too crumbly. And didn’t feel like I was eating a cookie.

purpose?

it would have probably been more productive to get out of this jamb house and have some interactions with people. That is probably the only thing that is going to make me feel better and heal. That and nature of course.

maybe that was the idea in the first place. Either way thanks for your ideas and your company.
