01 Sep Winter week 12 dinners
So, what have I been eating during this winter week 12? It will be a good exercise in memory to recall.

For three nights up to Sunday night I ate Tofu Peanut lettuce cups from The Guardian Feast app by none other than (!!!!) da da da da Yotam Ottolenghi.
I chose them because I wanted something with tofu. I have been eating a lot of chicken lately, and I feel that it should be the exception not the rule if living via Mediterranean diet principles.
For two nights before the Tofu Peanut lettuce cups, I ate two nights of probably my all-time favourite dish at the moment – Dahi murg – yoghurt chicken curry (also from The Guardian Feast app) – by Chetna Makan.
It is so easy to prepare from ingredients I usually have on hand and it is an absolute taste bomb to eat. . . just so flavoursome.
That is also where the broccoli and cauliflower come in. I have been using roasted vegetables as the base of my dinners for the winter months. This means instead of rice, or pasta, or bread, or polenta or any other kind of grain, I often bake a dish of winter veggies and serve that with an appetising sauce or main course.

Silly the hoo, , , now I really have to think hard about what I made before that. It was chicken I know that much, and I think I was doling it out piece by piece! I know what it was! It was this kind of dried apricot (but I used dried mango), coriander, chilli marinade that was whizzed up in a small blender, and smeared chicken thighs. This rested on a bed of onion wedges with a good 1/2 cup of vegetable stock (and baked). It was yummy. And I served that with the same combo (broccoli and cauliflower + mushrooms) to soak up all the juices.
