31 Aug CBF – horseradish crusted salmon with roasted veggies
So what IS cooking?? Another CBF meal to be precise! Something with the minimum of fuss. . . and a maximum of flavour!!
One tip that I would like to impart upon you is that if you are ever stuck for a marinade for veggies or a fillet of oily fish you can’t go past a lick of horseradish paste. It is always nice to have something of flavour on a (sustainable) salmon fillet. I had been trying miso paste, but it wasn’t quite the taste sensation. Horseradish cream on the other hand!? **chefs kiss. . . 🙂
I saw an advertisement for Hunky Dory today and really needed to get out for a walk in the sunshine because I was starting to spiral.
Fish seemed like a good idea for the brain foods, , , the omega 3s, , , and I also found something else special at the super, , , but this is the topic of the video I am currently making you!! 🙂

CBF horseradish crusted salmon with roasted veggies
Equipment
- 1 medium sized baking dish
- 1 sheet baking paper for easy clean up
Ingredients
- 1 slice salmon sustainable or wild caught if possible
- 1/4 head cauliflower chopped
- 1 large field mushroom chopped
- 1/4 zucchini chopped
- 1/2 cup any other veggies you want to use up!!
- 1 tbsp horseradish cream
- 1/2 tbsp olive oil
- 1 sprinkling sea salt
Instructions
- Place the salmon fillet in the middle of the tray and spread the horseradish paste over the surface.
- Add the chopped veggies around the fillet and drizzle with olive oil and a little salt
- Bake in oven at 200 - 210 degrees C for 30 minutes (or thereabouts - a little less if you like your salmon medium rare)
