Spicy salsa with egg on toast

Ingredients
  • For the salsa
  • - ¼ red onion - diced
  • - ½ red capsicum - diced
  • - handful of parsley finely chopped
  • For the dressing
  • - 1 tbsp sesame oil
  • - juice of half a lemon
  • - 2 tsp of tamari
  • - clove of garlic grated
  • - ¼ tsp of chilli flakes
  • To serve
  • - slice of toast
  • - boiled egg
Instructions
  1. Add dressing ingredients to a smalll bowl and stir.
  2. Add diced onion, capsicum and parsley to a medium bowl with dressing and toss.
  3. Add egg to pan of water and once boiling cook for 4 minutes
  4. Meanwhile toast bread
  5. Once bread is toasted, spoon salsa on top of the toast, and then slices of boiled egg.
