Ingredients
2 x 400 g tins of cannellini or other white beans, rinsed and drained
10–12 sun-dried tomatoes, chopped
For the pesto
1 bunch of fresh basil
100 g baby spinach (about 3 cups)
½ cup walnuts
1 lemon, juiced
3 tbsp olive oil
4 cloves of garlic
11/2 tbsp nutritional yeast
1 tsp white miso paste
salt, pepper
To serve
6 slices of bread, toasted
Tinned sardines
chilli flakes
fresh basil
iodised sea salt

Once you have made the pesto beans, mash a serving of sardines on the toasted bread and top with the pesto bean mixture.
